How To Stock a Small Kitchen With Everything You Need

Even if you have a small kitchen and a small budget, you can still save money by stocking it efficiently.
To complete this How-To you will need:
Basic pantry staples
Multi-purpose cookware
Step 1: Start with the basics
Start with your pantry. Buy only what you think you’ll use on a regular basis. Look at the ingredients of your favorite dishes in cookbooks and see which items show up the most.
Tip: If you’re a beginning cook, stock up on a few basic spices and condiments to experiment with flavors.
Step 2: Acquire pots and pans
Choose pots and pans. A large, aluminum-core skillet and a preseasoned cast-iron skillet cover searing, sauteing, and frying, and can go from stovetop to oven. A sturdy saucepan serves as the perfect pot for sauces, rice, and veggies, while a stockpot handles pasta and soup. For roasting and baking, pick up a jellyroll pan.
Tip: Stack pots and pans inside each other for storage, or just keep them on the stove if storage space is at a premium.
Step 3: Acquire utensils
Cover the utensil basics: a wooden spoon and a heatproof spatula, a sturdy spatula for flipping, a pair of tongs, a ladle, a rasp grater, a vegetable peeler, and a whisk. A chef’s knife can handle the work of several specialty knives.
Step 4: Limit appliances
Be selective with appliances. How much do you cook, and what can you do by hand? A toaster oven takes up little space but is a great multi-tasker. If you drink coffee every morning, consider a single-cup maker.
Step 5: Dishes and flatware
Unless you entertain often, four settings of basic dishes, glasses, and flatware should do the trick. Save the espresso cups and oyster forks for when you get a bigger place!

Make your coffee maker sparkle with these easy tips.
To complete this How-To you will need:
A drip coffee maker
White vinegar
Ice cubes
Table salt or rock salt
Dishwasher detergent
A dish brush
Baking soda
Alka-Seltzer tablets
Denture tablets
A fresh lemon
Step 1: Clean the machine
Clean the inside of your coffee maker by running a mixture of equal parts white vinegar and water though the machine. Do two runs with water afterward to remove the vinegar.
Tip: You can substitute a half dozen Alka-Seltzer or denture tablets, a quarter of a cup of baking soda, or the juice of a fresh lemon for the vinegar.
Step 2: Get ice and salt
To get your carafe looking like new, try this barista trick. Toss a handful of ice cubes and a couple of teaspoons of salt—rock or table—into the carafe.
Step 3: Swish vigorously
Swish vigorously for a minute or two.
Step 4: Rinse thoroughly
Rinse thoroughly.
Tip: If you have a stainless-steel carafe, fill it with boiling water, add a few tablespoonfuls of powdered dishwasher detergent, let it sit overnight, then swish with a dish brush and rinse.
Step 5: Fill with water and baking soda
To get rid of any lingering vinegar smell in the carafe, fill it with warm water, add a teaspoon of baking soda, let it sit for a few minutes, and rinse well. You’re ready for a delicious cup of coffee!

presso is a simple but effective manual espresso machine. official site: http://www.presso.com
currently i only have access to a whirly blade grinder – the grind was clearly off here. there was not a full extraction on the first press and it required much more pressure than usual and after the second press there was a lot of broth.
any second press should be discarded.
anyway here is my current presso routine:
1. grind/dose
2. distribute/level
3. tamp
4. run hot water through the presso (clean and pre-heat)
5. pre-heat portafilter for short period
6. load basket into portafilter
7. very very light tamp again just to ensure even level (the “click” of the basket into the portafilter sometimes disturbs the level)
8. boil water
9. fill presso just above line for double shot
10. press
11. second press if required (to a separate cup normally to empty any remaining water from the presso)
12. remove portafilter and run hot water through presso again to clean

Julia’s Sunday Dinners #6 – Chicken Soup Part 3/3
Chicken Broth
Raw chicken carcass or whole chicken
package of soup greens including:
1 yellow onion
Carrots
Parsnip
Turnip
Fresh Dill
Fresh parsley
Mushrooms
Salt and pepper to taste
Put all ingredients in to 8 qt stock pot.
Barely cover with water and bring to a slow simmer for about 1 hour.
Skim off fat from the top of soup every 15 minutes.
Then take a strainer of some sort and place it in another pot on the stove. Pour soup into strainer. (If you have a cheesecloth, you can use that to drain the soup at this point, instead of the strainer, thus eliminating the use for the next step.)
Then take the soup and pour it through a smaller strainer, coffee filter, or any other very fine strainer.
Serve with matzoh balls or reusue the vegetables and add some pasta and have a chicken noodle soup.
Spinach Matzoh Balls
3 Large Eggs
1 1/2 tablespoons water
1 teaspoon baking powder
3/4 teaspoon sugar
1 teaspoons salt
1/8 teaspoons black pepper
1 cup unsalted matzoh meal
5 tablespoons chicken fat
1/4 cup frozen spinach, thawed and drained.
Mix all ingredients in medium sized bowl.
Cover with plastic wrap and chill in refrigerator for at least 30 minutes.
Fill 2 or 3 quart sauce pot on stove and bring to a slow rolling boil.
Take mixture and form into balls about 3 cm in diameter. The balls will double in size when cooked.
Drop formed balls gently into boiling water individually. Boil for about 5 minutes and remove.
Place in your favorite broth.
