Using a Stovetop Expresso Maker
The stovetop espresso maker, also known as “macchinetta”, is still the most popular way of making espresso at home.
It works by creating pressure through heat to force water through finely ground coffee and into a serving chamber.
How much is 1 cup? A traditional espresso is about 1.5 ounces. A 6-cup espresso maker would thus make approximately 9 oz. of that delicious liquid. Though espresso cups may hold 3 to 4 oz., it is customary to only partly fill the cup.
macchinettaBecome familiar with the parts of your macchinetta. Take it apart and examine how each part fits in place before you wash and use it the first time.
To maintain the macchinetta in good condition, wash all the parts with hot sudsy water, and rinse thoroughly. Before first use, and regularly (though not necessarily every time), also remove and wash the rubber gasket and round flat filter plate. Use a dull knife point, or small screwdriver, to remove the gasket, and to get to the filter plate. When the gasket dries or cracks, replace it. A telltale sign of a needed replacement gasket will be that some steam will begin to escape from the screw threads between the top and bottom pieces of your macchinetta.
Occasionally scour the inside of the macchinetta to remove mineral deposits. Or soak with a solution of equal parts white vinegar and water, then rinse thoroughly.
Gaskets are likely to last at least a year if they are cleaned on a regular basis. Keep a note of the name of the manufacturer of the espresso maker, its model name and size; this will help in obtaining replacement gaskets. If you can’t find a replacement, get a sheet of rubber in a similar thickness (from your local hardware or plumbing supply store), and use the old gasket to cut out a template on the sheet of rubber.

THERMAL POT CHOCOLATE and KAHLUA SELF SAUCING PUDDING
Chocolate and Kahlua Self Saucing Pudding
1 cup SR Flour
2 Tablespoons Cocoa Powder
1/2 cup brown sugar
2 Tablespoons butter melted and cooled
1/3 cup of milk
2 Tablespoons Kahlua
1 egg lightly beaten
Cream, Icecream and berries optional
SAUCE
3/4 Cup Brown Sugar
2 Tablespoons Cocoa Powder
1 1/4 cups boiling water.
Grease small pot and underside of lid
Sift sauce sugar and cocoa into a bowl and put aside.
Sift flour and cocoa and pinch of salt into a large bowl, stir in sugar.
Mix cooled butter, beaten egg, milk, Kahlua and then slowly add to pudding mixture until combined then put into the small greased pot.
Sprinkle on dry sauce ingredients, then carefully pour over the back of a spoon the 1 1/4 cups of boiling water.
Fill large pot 2/3rd put small pot on top and bring to the boil over heat and reduce and simmer for 35 minutes.
Then put both pots into the Thermal pot for at least an hour.
Enjoy.
Endless variations could be made. Turn it into mocha by adding a tablespoon of coffee to the boiling water before you pour it over. Add choc chips etc.

Make a Stovetop Espresso with “Crema” Foam
This shows my technique for making stovetop espresso with a moka pot. The ‘crema’ (foam on top) is created by whipping sugar with some coffee before pouring the finished coffee into the cup. It’s not the crema that you’d get from a real espresso machine but it’s still good! I find that 2 parts of sugar with slightly less than 1 part coffee gives the right consistency (it takes a bit of practice). You have to use the first bit of coffee that emerges because it is thicker. The song is “40 Cups of Coffee” by Ella Mae Morse. Thanks to Jordan for filming!
